APPLE COFFEE CAKE - bake and serve in our medium pie plate -
Cake Ingredients:
* 2 1/4 c white or whole wheat flour
* 1 tsp baking soda
* 1/2 tsp baking powder
* 1 tsp cinnamon
* 1/4 c veg. oil or softened butter
* 1/4 c apple sauce
* 1 egg
* 3/4 c frozen concentrated apple juice
* 1 heaping cup diced apples (with or without peel)
Directions:
Preheat oven to 350 degrees (375 degrees for metal pan).
Grease a medium Kovack Pottery pie plate.
In a large bowl combine first4 cake ingredients:
Mix well then add next4 cake ingredients.
Mix well then fold in diced apple.
Spread into pie plate.
Combine topping ingredients in small bowl & mix with fork.
Evenly distribute over top of cake & press down lightly.
Bake 35-40 min. or until top springs back when pressed.
Topping Ingredients:
* 2 tbsp oats
* 2 tbsp brown sugar
* 2 tbsp flour or wheat germ
* 1 tbsp cinnamon
* 1 tbsp veg. oil or softened butter
PEAR CRUMBLE - bake and serve in our large pie plate -
Ingredients:
* 6 to 10 c pears (or peaches
or apples)
* 2 tbsp lemon juice
* 1 c rolled oats
* 2/3 c flour or wheat germ
Directions:
Core, peel, & thinly slice the fruit.
Preheat oven to 400 degrees.
Grease a large Kovack Pottery pie plate.
Add prepared fruit, sprinkle lemon juice over top.
Toss lightly to coat, even out the top, and set aside.
In a medium sized bowl, combine remaining ingredients.
Mix well then add margarine or oil (the topping will be a little less crumbly with oil, but still very good).
Mix with fork until crumbly.
Evenly distribute over fruit.
Bake about 30 minutes for 6 cups of fruit or about45 minutes for 10 cups of fruit (until tender & bubbling).
Remove from oven & cool for 30 minutes before serving.
Great with whipped cream or ice cream.
* 1/2 c brown sugar
* 1 tbsp cinnamon
* 1/8 tsp cloves
* 1/3 c soft margarine or vegetable oil
GOOD OLD FASHIONED PANCAKES - mix up in our batter bowl and pour into skillet -
(makes 8 pancakes)
Ingredients:
* 1 1/2 c all-purpose flour
* 3 1/2 tsp baking powder
* 3/4 tsp salt
* 1 tbsp white sugar
Directions:
In Kovack Pottery batter bowl, sift together the flour, baking powder, salt & sugar.
Make a well in the center and pour in the milk, egg, butter, & vanilla.
Mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat.
Pour the batter onto the griddle, using approximately 1/4 cup for each pancake.
Flip when edges start to bubble.
Brown on both sides and serve hot.
* 1 1/4 c milk
* 1 egg
* 3 tbsp melted butter or oil
* 1 tsp Vanilla
SOUTHERN CORNBREAD - bake and serve in our small pie plate -
Ingredients:
*1 medium egg
*1/2 c + 2 tbsp milk
*2 tbsp oil or
melted butter
*3/4 c cornmeal
Directions:
Preheat oven to 375 degrees (400 degrees for metal pan).
In a medium bowl combine egg, milk, & oil (or butter) & mix well.
Add cornmeal, flour, baking powder, salt, & sugar.
Mix until smooth.
Pour into greased 7.5" Kovack Pottery pie plate.
Bake 30 minutes.
Cool then cut into 4 pieces.
*1/4 c + 2 tbsp flour
*1 1/2 tsp baking powder *1/4 tsp salt *1 tbsp sugar
